Baguette Preparation

    Prepare the Dough

    In a large bowl, combine all-purpose flour, barley flour, salt, and active dry yeast. Mix well.

    Mix Wet Ingredients

    In a separate bowl, mix warm water and honey until dissolved. Gradually add this mixture to the dry ingredients while stirring continuously.

    Knead the Dough

    Once combined, knead the dough on a floured surface until smooth and elastic, about 8-10 minutes.

    First Rise

    Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 hour.

    Shape the Baguettes

    Punch down the risen dough and divide it into two equal portions. Shape each portion into a long baguette.

    Second Rise

    Place the shaped baguettes on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

    Preheat Oven

    Preheat your oven to 450°F (230°C).

    Bake the Baguettes

    Make several slashes on top of each baguette with a sharp knife. Bake for 20-25 minutes until golden brown.

    Allow the baguettes to cool on a wire rack. Serve warm with whole butter.
