Prepare the Pasta

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Once cooked, drain the pasta and set aside.

Prepare the Vegetables

    Chop the Vegetables

    While the pasta is cooking, wash and chop the zucchini, bell pepper, and cherry tomatoes. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Then add the chopped zucchini and bell pepper, cooking for about 5 minutes or until tender. Add the cherry tomatoes and spinach, cooking for another 2-3 minutes until the spinach wilts.

Combine and Serve

    Mix Pasta and Vegetables

    In the skillet with the sautéed vegetables, add the drained pasta. Pour in the remaining 2 tablespoons of olive oil, and season with salt and black pepper to taste. Toss everything together gently until well combined.

    Serve

    Serve the pasta warm, garnished with grated Parmesan cheese on top. Enjoy your delicious vegetarian pasta!
