Prawn Preparation

Prepare the prawns
In a large pot, bring salted water to a boil. Add the prawns and cook for about 2-3 minutes or until they turn pink and opaque. Do not overcook.

Cooling
Once cooked, remove the prawns immediately and place them in a bowl of ice water to stop the cooking process. Let them cool for 5 minutes.

Drain and season
Drain the cooled prawns and pat them dry with paper towels. Toss them with lemon juice and a pinch of salt.
Cocktail Sauce Preparation

Mix the sauce
In a medium bowl, combine mayonnaise, ketchup, horseradish sauce, Worcestershire sauce, lemon juice, and hot sauce if using. Stir well until all ingredients are fully incorporated.

Taste and adjust
Taste the cocktail sauce and add salt to taste, adjusting the heat with more hot sauce if desired.
Assembly

Prepare serving dish
On a serving platter, lay down the lettuce leaves to create a bed for the prawns.

Add prawns
Arrange the seasoned prawns on top of the lettuce leaves.

Serve with sauce
Serve the prawns immediately with the cocktail sauce on the side, garnished with lemon wedges.
