In a mixing bowl, combine the cleaned and sliced calamari with salt, black pepper, and cayenne pepper. Toss to coat the calamari evenly with the seasoning.

In another bowl, mix the all-purpose flour and cornstarch together. Dip each piece of seasoned calamari into the beaten egg, then dredge it in the flour-cornstarch mixture, ensuring it is fully coated.

Fry the Calamari
Carefully add the coated calamari to the hot oil in small batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes, or until golden brown and crispy.

Using a slotted spoon, remove the fried calamari from the oil and transfer them to a plate lined with paper towels to drain excess oil. Sprinkle with a little extra salt if desired.

In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Sriracha sauce, salt, and pepper. Mix well until all ingredients are fully combined and the aioli is smooth.
