Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and butter. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

    Prepare the Egg Mixture

    In a separate bowl, whisk the egg yolks with granulated sugar and vanilla extract until pale and creamy. Gradually add the melted chocolate mixture, stirring until fully incorporated.

    Beat the Egg Whites

    In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into serving cups or bowls and refrigerate for at least 2 hours, or until set.

Whipped Cream Preparation

    Whip the Cream

    In a chilled bowl, combine heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.

    Top the Mousse

    Once the mousse is set, remove it from the refrigerator and dollop the whipped cream on top of each serving before serving.
