Method
Preparation
- 1
- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Let it cool slightly.
- 3
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened. Add the vanilla extract and a pinch of salt, mixing until well combined.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while continuously whisking. This will temper the eggs and prevent them from cooking.
- 5
Incorporate Flour
Sift in the all-purpose flour and gently fold it into the batter until just combined. Be careful not to overmix.
Baking
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should be soft.
- 8
Cool and Serve
Remove the ramekins from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges to loosen the cakes, then invert them onto plates.
Serving
- 9
Serve with Ice Cream
Serve each chocolate lava cake warm, topped with a scoop of vanilla ice cream. Enjoy!
