Fondant Preparation

Preheat the Oven
Preheat your oven to 200°C (390°F) to ensure it's ready for baking.

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals until smooth. Stir well to combine.

Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture becomes light and frothy.

Add Dry Ingredients
Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Gently fold the dry ingredients into the wet ingredients until just combined.

Fill Ramekins
Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

Bake
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

Cool Slightly
Remove from the oven and let them cool for about 1-2 minutes before serving.

To serve, carefully run a knife around the edges of each ramekin and invert onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
