Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let it cool while preparing the filling.

Filling Preparation

  1. 3

    Prepare the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

  2. 4

    Add ingredients

Gradually add the granulated sugar, sour cream, and vanilla extract, mixing until fully combined. Scrape down the sides of the bowl as needed.

  3. 5

    Incorporate eggs

Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

  4. 6

    Pour filling into crust

Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Baking and Cooling

  1. 7

    Bake the cheesecake

Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

  2. 8

    Cool the cheesecake

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then, remove from the oven and let it cool at room temperature for another hour.

  3. 9

    Chill

Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Topping and Serving

  1. 10

    Prepare the topping

Before serving, wash and dry the fresh berries. Arrange them on top of the chilled cheesecake.

  2. 11

    Garnish

If desired, garnish with fresh mint leaves for added color and flavor.

  3. 12

    Slice and serve

Carefully remove the sides of the springform pan, slice the cheesecake, and serve chilled.
