Method

Crust Preparation

  1. 1

    Prepare the Crust

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

  2. 2

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a measuring cup to ensure it is even.

  3. 3

    Pre-bake the Crust

Preheat the oven to 350°F (175°C). Bake the crust for 10 minutes, then remove from the oven and let it cool.

Cheesecake Filling Preparation

  1. 4

    Mix Cream Cheese

In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

  2. 5

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream, mixing until well combined. Scrape down the sides of the bowl as necessary.

  3. 6

    Incorporate Vanilla and Eggs

Add the vanilla extract and mix. Then add the eggs one at a time, mixing on low speed until just combined after each addition.

  4. 7

    Add Flour

Sift in the all-purpose flour and mix until just incorporated, being careful not to overmix.

  5. 8

    Bake the Cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for 1 hour or until the center is set but slightly jiggly.

  6. 9

    Cool the Cheesecake

Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Then refrigerate for at least 4 hours or overnight.

Strawberry Coulis Preparation

  1. 10

    Cook the Strawberries

In a small saucepan, combine the sliced strawberries, granulated sugar, and lemon juice. Cook over medium heat until the strawberries soften and release their juices, about 5-7 minutes.

  2. 11

    Blend the Coulis

Remove from heat and let cool slightly. Blend the mixture until smooth, then strain through a fine mesh sieve if desired for a smoother texture.

Whipped Cream Preparation

  1. 12

    Whip the Cream

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip on medium-high speed until soft peaks form.

Serving

  1. 13

    Serve the Cheesecake

Remove the cheesecake from the springform pan. Slice and serve with a drizzle of strawberry coulis and a dollop of whipped cream on top.
