Prepare the Ingredients

Begin by slicing the beef sirloin into thin strips. Clean and slice the mushrooms. Chop the onion and mince the garlic.

Sear the Beef

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef sirloin and season with salt and black pepper. Sear for about 3-4 minutes until browned but not fully cooked. Remove from skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, cooking until softened, about 2-3 minutes. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5 minutes.

Sprinkle the flour over the mushroom mixture and stir for 1 minute to cook out the raw flour taste. Gradually pour in the beef broth, stirring constantly until the mixture thickens. Stir in the Worcestershire sauce, paprika, and return the seared beef to the skillet.

Reduce heat to low and stir in the sour cream until well combined. Allow to simmer for an additional 5 minutes. Adjust seasoning with additional salt and pepper to taste.
