Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt until well combined.

Mix Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients and mix until just combined. Add the boiling water and stir until the batter is smooth.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.

Prepare the Whipped Cream
In a mixing bowl, combine the mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract.

Whip the Mixture
Using an electric mixer, whip the mixture until soft peaks form. Be careful not to overwhip.
Chocolate Cookie Crumble

Crush the Cookies
In a food processor, pulse the chocolate cookies until they reach a fine crumb consistency.

Combine with Butter
In a bowl, mix the crushed cookies with melted unsalted butter until well combined.
Assembly

Layer the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of mascarpone whipped cream on top.

Add the Crumble
Sprinkle a generous amount of chocolate cookie crumble over the whipped cream layer.

Finish the Cake
Add the second layer of cake on top and repeat the process with whipped cream and cookie crumble. Finish with a final layer of whipped cream and more cookie crumble on top.
