Grilled Asparagus

Béarnaise Sauce

Method

Preparing Grilled Asparagus

  1. 1

    Prepare the Asparagus

Rinse the fresh asparagus under cold water and trim the ends to remove any tough or woody parts.

  2. 2

    Season the Asparagus

In a bowl, toss the asparagus with olive oil, salt, and black pepper until evenly coated.

  3. 3

    Grill the Asparagus

Preheat your grill to medium-high heat. Place the seasoned asparagus directly on the grill, cooking for about 5-7 minutes, turning occasionally until tender and slightly charred.

Making Béarnaise Sauce

  1. 4

    Prepare the Reduction

In a small saucepan, combine the shallots, white wine vinegar, and white wine. Bring to a simmer and reduce the mixture by half, then remove from heat and let cool slightly.

  2. 5

    Melt the Butter

In another saucepan, melt the unsalted butter over low heat until completely liquefied. Keep warm but not boiling.

  3. 6

    Whisk Egg Yolks

In a heatproof bowl, whisk the egg yolks with the cooled reduction until slightly thickened.

  4. 7

    Combine Mixtures

Place the bowl over a pot of simmering water (double boiler method). Gradually whisk in the melted butter, a little at a time, until the sauce is thick and creamy.

  5. 8

    Season the Sauce

Stir in the fresh tarragon, salt, and black pepper. Remove from heat and keep warm until ready to serve.
