Method

Preparation of Cauliflower

  1. 1

    Prepare the Cauliflower

Remove the leaves and stem from the cauliflower and cut it into florets. Rinse the florets under cold water to remove any dirt.

  2. 2

    Boil the Cauliflower

In a large pot, bring water to a boil. Add the cauliflower florets and a pinch of salt. Cook for 10-12 minutes until the cauliflower is tender.

Making the Puree

  1. 3

    Drain and Blend

Once the cauliflower is tender, drain it well and transfer it to a blender or food processor. Add the butter, heavy cream, salt, and black pepper.

  2. 4

    Puree the Mixture

Blend until smooth and creamy. If the mixture is too thick, you can add a little more cream to reach your desired consistency.

Serving Suggestions

  1. 5

    Garnish and Serve

Transfer the cauliflower puree to a serving dish. Drizzle with olive oil and sprinkle with chopped chives if desired. Serve warm as a side dish.
