    Prepare the Grits

    In a medium pot, bring 4 cups of water to a boil. Add the Maine Grains grits and a pinch of salt. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy. Stir in the pimento cheese until melted and fully incorporated. Keep warm.

    Cook the Andouille Sausage

    In a large skillet, heat olive oil over medium heat. Add diced Andouille sausage and cook until browned, about 5-7 minutes. Remove sausage from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add diced onion, bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes.

    Cook the Shrimp

    Add the shrimp to the skillet and sprinkle with Cajun seasoning, salt, and black pepper. Cook until shrimp turn pink and opaque, about 3-5 minutes.

    Fry the Eggs

    In a separate non-stick pan, fry the eggs sunny-side up to your liking.

    Assemble the Dish

    To serve, spoon a generous portion of cheesy grits onto each plate. Top with the Andouille sausage and shrimp mixture. Place a sunny-side up egg on top of each serving and garnish with chopped green onions.
