Cherry Marmalade Preparation

    Cook the Cherries

    In a saucepan over medium heat, combine chopped cherries, sugar, lemon juice, and vanilla extract. Cook for about 10-15 minutes until the mixture thickens and becomes syrupy. Remove from heat and let it cool.

Flourless Chocolate Cake Preparation

    Melt Chocolate and Butter

    In a double boiler or microwave, melt the chopped semisweet chocolate and butter together until smooth. Let it cool slightly.

    Mix Ingredients

    In a bowl, whisk together the sugar and vanilla extract with the melted chocolate mixture. Add in the eggs, one at a time, mixing well after each addition. Sift in the cocoa powder and fold gently until just combined.

    Bake the Cake

    Pour the batter into a greased 9-inch round cake pan. Bake in a preheated oven at 350°F (175°C) for about 25 minutes. Let it cool completely before removing from the pan.

Verrine Assembly

    Assemble the Verrine

    In small glasses or verrine jars, layer the cherry marmalade, cubes of flourless chocolate cake, and whipped cream. Repeat the layers until the glasses are filled. Top with dark chocolate shavings.

    Refrigerate the assembled verrines for at least 1 hour before serving to allow the flavors to meld.
