Red Lentil Falafel Wrap Recipe

Prepare Falafel

    Cook Lentils

    Rinse red lentils and cook in boiling water for about 15 minutes until soft. Drain and let cool.

    Blend Ingredients

    In a food processor, combine cooked lentils, garlic, onion, parsley, cumin, coriander, baking powder, salt, and pepper. Blend until smooth.

    Form Balls

    Shape the mixture into small balls or patties.

    Fry Falafel

    Heat olive oil in a skillet over medium heat. Fry falafel until golden brown on all sides, about 3-4 minutes per side.

Prepare Hummus

    In a blender, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until creamy.

Prepare Marinated Vegetables

    Slice bell peppers, zucchini, and red onion. In a bowl, mix with olive oil, balsamic vinegar, salt, and pepper. Let sit for at least 30 minutes.

Prepare Herb Yogurt

    In a bowl, mix plain yogurt with dill, mint, lemon juice, and salt.

Prepare Cucumber Salad

    Dice cucumber and red onion, and halve cherry tomatoes. In a bowl, combine all ingredients with olive oil, lemon juice, salt, and pepper.

Assemble Wrap

    On each whole wheat wrap, spread a layer of hummus, add falafel, marinated vegetables, herb yogurt, and cucumber salad. Roll tightly and serve.
