Make the Cookie Dough
Preheat the oven to 350°F (175°C). In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.

Combine Dry Ingredients
In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually mix this into the creamed mixture until just blended. Fold in the chocolate chips.

Shape and Bake
Drop rounded tablespoons of dough onto ungreased baking sheets. Bake in the preheated oven for 10 to 12 minutes, or until set. Let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Make the Sandwich
Once the cookies are completely cooled, take one cookie and place a scoop of your choice of strawberry or espresso-stout ice cream on the flat side. Top with another cookie, flat side down. Press gently to create a sandwich.

Serve immediately, or freeze the sandwiches for a firmer treat.
