Marinated Fruit

Method

Preparation

  1. 1

    Prepare the Lobster Hash

Dice the potatoes, red bell pepper, and yellow onion. Mince the garlic. In a skillet, heat butter and olive oil over medium heat. Add the potatoes and cook until tender. Add the vegetables and garlic, cook until they are soft. Stir in the lobster meat, season with salt and black pepper, and cook until warmed through.

  2. 2

    Make the Béarnaise Sauce

In a saucepan, combine white wine vinegar, tarragon, and a pinch of salt. Simmer until reduced. In a bowl, whisk egg yolks until frothy. Gradually add melted butter while whisking continuously until the sauce thickens.

  3. 3

    Toast the Baguette

Preheat the oven to 375°F (190°C). Slice the baguette, brush with olive oil, and toast in the oven until golden.

  4. 4

    Marinate the Fruit

In a bowl, combine mixed berries, honey, and lemon juice. Toss gently and let sit for 15 minutes.

Assembly

  1. 5

    Serve

Plate the lobster hash, drizzle with Béarnaise sauce, serve with toasted baguette, and a side of marinated fruit.
