Method
Fish Preparation

Season the Fish
In a bowl, season the Acadian redfish fillets with olive oil, cumin, paprika, salt, and black pepper.

Cook the Fish
Heat a skillet over medium heat and cook the fish for about 4-5 minutes on each side, or until fully cooked and flaky.
Pico de Gallo Preparation

Mix Ingredients
In a bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside.
Red Chile Crema Preparation

Prepare the Crema
In a small bowl, mix sour cream, red chile sauce, and lime juice until well combined. Set aside.
Summer Slaw Preparation

Make the Slaw
In a large bowl, mix shredded cabbage, shredded carrots, apple cider vinegar, honey, and salt. Toss until evenly coated.

Assemble the Tacos
Warm the corn tortillas in a dry skillet. Place cooked fish on each tortilla, top with pico de gallo, summer slaw, and drizzle with red chile crema. Serve with steamed corn on the side.
