Prepare Canadian Bacon

    Heat olive oil in a skillet over medium heat. Add Canadian bacon and cook until browned on both sides, about 3-4 minutes.

Make Hollandaise Sauce

    Emulsify Egg Yolks

    In a heatproof bowl, whisk together egg yolks and lemon juice until thick and pale.

    Add Butter

    Slowly drizzle in melted butter while whisking continuously until the sauce thickens. Season with salt and cayenne pepper.

Prepare Homefries

    Dice potatoes, onion, and bell pepper. In a skillet, heat olive oil over medium heat, add potatoes, onion, and bell pepper. Season with salt and black pepper. Cook until potatoes are golden and tender, about 10-15 minutes.

Assemble Eggs Benedict

    Toast the English muffins. Place a slice of Canadian bacon on each muffin half, top with a poached egg, and drizzle with hollandaise sauce. Serve with homefries on the side.
