    Prepare the Rub

    In a bowl, combine smoked paprika, garlic powder, onion powder, brown sugar, red chile powder, salt, and black pepper to create a dry rub.

    Season the Pork

    Rub the spice mixture all over the pork shoulder, ensuring it is evenly coated. Let it marinate for at least 1 hour, or ideally overnight in the refrigerator.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and cook for about 6-8 hours, or until the internal temperature reaches 195°F (90°C) and the meat is tender.

    Shred the Pork

    Once cooked, remove the pork from the smoker and let it rest for 30 minutes. Using two forks, shred the pork into bite-sized pieces.

    Add Liquid

    In a large bowl, mix the shredded pork with apple cider vinegar and water to moisten the meat and add flavor.

    Serve

    Spoon the pulled pork onto buns and serve with giardiniera on the side.
