Prepare the Latkes
In a large bowl, mix grated potatoes, grated onion, beaten egg, flour, salt, and black pepper until well combined. Form the mixture into small patties.

Marinate the Prawns
In a bowl, combine prawns, Cajun seasoning, olive oil, and black pepper. Toss to coat and let marinate for 15 minutes.

Grill the Prawns
Preheat the grill or grill pan. Grill the marinated prawns for about 2-3 minutes on each side until cooked through and slightly charred.

Prepare the Broth
In a saucepan, heat seafood broth and bring to a simmer. Add halved cherry tomatoes and sliced leeks, cooking for about 5 minutes until the leeks are tender.

Assemble the Dish
Place a potato latke on each plate, top with grilled prawns, and ladle the seafood broth with tomatoes and leeks around the latke. Garnish with fresh parsley.
