Main Ingredients

Method

Fried Plantains

  1. 1

    Prepare the Plantains

Peel the ripe plantains and cut them into diagonal slices about 1 inch thick.

  2. 2

    Heat the Oil

In a large skillet, heat the coconut oil over medium heat until hot.

  3. 3

    Fry the Plantains

Add the plantain slices to the skillet and fry them until golden brown on both sides, about 3-4 minutes per side.

  4. 4

    Dust with Cinnamon Sugar

In a small bowl, mix together the sugar and cinnamon. Once the plantains are fried, remove them from the skillet and sprinkle the cinnamon sugar mixture over them while they are still warm.

Coconut Whip

  1. 5

    Make the Coconut Whip

In a mixing bowl, combine the coconut cream, vanilla extract, and powdered sugar. Use a hand mixer to whip until light and fluffy, about 2-3 minutes.
