Barbacoa Preparation

Prepare the Barbacoa
In a slow cooker, add the beef chuck roast, chopped onion, minced garlic, chipotle peppers, cumin, oregano, cinnamon stick, beef broth, salt, and black pepper. Cover and cook on low for 8-10 hours or until the beef is tender and easily shreds.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix it with the juices.

Warm the Tortillas
In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos
To assemble the tacos, place a portion of barbacoa on each tortilla. Top with habanero salsa, pickled red onion, and cotija cheese. Squeeze fresh lime juice over the top.
