Method
Figgy Pudding
Prepare the Batter
In a large mixing bowl, cream together softened butter and brown sugar until fluffy. Add eggs, one at a time, mixing well after each addition. Stir in milk and vanilla extract.
Combine Dry Ingredients
In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and chopped figs.
Mix and Bake
Gradually add the dry ingredients to the wet mixture and stir until just combined. Pour into a greased pudding mold and steam in a pot of simmering water for 1.5 hours or until a toothpick comes out clean.
Orange Toffee Sauce
Make the Sauce
In a saucepan, melt butter over medium heat. Stir in brown sugar and cook until bubbling. Add cream, orange zest, and orange juice, stirring until smooth. Cook for an additional 5 minutes.
Spiced Cranberry and Pumpkin Seed Granola
Prepare the Granola
Preheat the oven to 325°F (165°C). In a large bowl, combine oats, pumpkin seeds, cranberries, cinnamon, maple syrup, and melted coconut oil. Spread on a baking sheet and bake for 20-25 minutes, stirring halfway through.
