Method

Dough Preparation

  1. 1

    Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt until well combined.

  2. 2

    Cut in Butter

Add the cold, diced unsalted butter to the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

  4. 4

    Chill Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Prepare the Fruit

Wash, peel (if necessary), and chop the fresh fruit into small pieces, measuring about 2 cups.

  2. 6

    Mix Filling Ingredients

In a mixing bowl, combine the prepared fruit, granulated sugar, ground cinnamon, cornstarch, and lemon juice. Toss until the fruit is evenly coated.

Assembly and Baking

  1. 7

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 8

    Roll Out Dough

On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles or squares using a cookie cutter or a knife.

  3. 9

    Fill Turnovers

Place a spoonful of the fruit filling in the center of each dough piece. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.

  4. 10

    Prepare Egg Wash

In a small bowl, beat together the egg and milk. Brush this mixture over the tops of each turnover for a golden finish.

  5. 11

    Bake

Place the turnovers on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until golden brown.

  6. 12

    Cool and Serve

Remove from the oven and let cool for a few minutes before serving warm or at room temperature.
