Prepare the Pie Crust

    Make the Dough

    In a large bowl, combine all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

    Chill the Dough

    Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling

    Mix Ingredients

    In a large bowl, combine the fruit, granulated sugar, cornstarch, cinnamon, and lemon juice. Toss until the fruit is evenly coated.

Assemble the Pie

    Roll Out the Dough

    Preheat the oven to 425°F (220°C). On a floured surface, roll out one disk of dough to fit your pie dish.

    Add Filling

    Transfer the rolled dough to the pie dish and fill with the fruit mixture. Dot with butter.

    Top the Pie

    Roll out the second disk of dough and place over the filling. Seal and flute the edges. Cut slits in the top crust for steam to escape.

Bake the Pie

    Prepare for Baking

    If desired, beat the egg with milk and brush over the top crust for a shiny finish.

    Bake in the preheated oven for 45-50 minutes, or until the crust is golden and the filling is bubbly.
