Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Vegetable Preparation

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then add bell pepper, zucchini, carrots, and broccoli. Cook for about 5-7 minutes until the vegetables are tender but still vibrant. Add cherry tomatoes and cook for an additional 2-3 minutes.

Combine and Serve

  1. 3

    Mix Pasta and Sauce

Add the cooked pasta to the skillet with the sautéed vegetables. Sprinkle in Italian seasoning and black pepper, and toss everything together. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.

  2. 4

    Finish with Cheese and Garnish

Remove from heat and stir in the shredded Parmesan cheese until well combined. Plate the pasta primavera and garnish with fresh basil leaves to taste. Serve immediately.
