Popover Batter Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Place a popover pan or muffin tin in the oven to heat up.

    Mix Dry Ingredients

    In a mixing bowl, whisk together the all-purpose flour, salt, and cinnamon.

    Combine Wet Ingredients

    In another bowl, combine the milk and eggs. Whisk until well blended.

    Melt Butter

    In a small saucepan, melt the 2 tablespoons of unsalted butter over low heat. Let it cool slightly.

    Combine Mixtures

    Add the melted butter to the wet mixture and stir to combine. Gradually pour the wet ingredients into the dry ingredients, whisking until just combined. Do not overmix; a few lumps are okay.

    Prepare Cinnamon Swirl

    In a small bowl, mix together the brown sugar, 2 teaspoons of cinnamon, and 1 tablespoon of softened unsalted butter until it forms a crumbly mixture.

Baking the Popovers

    Fill the Pan

    Carefully remove the hot popover pan from the oven. Grease the cups with a little additional melted butter if needed. Pour the batter into each cup, filling them about halfway. Then sprinkle the cinnamon swirl mixture on top of each filled cup.

    Bake

    Place the pan back in the oven and bake for 20-25 minutes, or until the popovers are puffed and golden brown.

    Cool and Serve

    Once baked, remove the popovers from the oven and let them cool for a few minutes before gently removing them from the pan. Serve warm.
