Dough Preparation

    Activate Yeast

    In a small bowl, combine warm milk (about 110°F) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture, eggs, and vanilla extract. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Incorporate Butter

    Roll out the dough into a rectangle, place softened butter in the center, and fold the dough over to encase the butter. Roll out and fold the dough (laminating) about 4 times, chilling for 30 minutes between each fold.

    Mix the Filling

    In a medium bowl, combine almond paste, powdered sugar, butter, almond extract, and egg yolk. Mix until smooth and well combined.

Assembly and Baking

    Shape the Croissants

    Roll out the dough into a large rectangle and cut into triangles. Place a spoonful of almond filling at the wide end and roll up tightly from the wide end to the point.

    Place the filled croissants on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for about 30-45 minutes.

    Preheat Oven & Bake

    Preheat the oven to 375°F (190°C). Brush the croissants with an egg wash (1 egg beaten with 1 tbsp water) and sprinkle with sliced almonds. Bake for 20-25 minutes until golden brown.

    Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
