Activate Yeast
In a small bowl, combine warm milk (about 110°F) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture, eggs, and vanilla extract. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

In a medium bowl, combine almond paste, powdered sugar, butter, almond extract, and egg yolk. Mix until smooth and well combined.

Shape the Croissants
Roll out the dough into a large rectangle and cut into triangles. Place a spoonful of almond filling at the wide end and roll up tightly from the wide end to the point.

Place the filled croissants on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for about 30-45 minutes.
