Method
Preparing the Dough
- 1
Activate the Yeast
In a small bowl, combine the warm milk, water, and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
- 2
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour and salt.
- 3
Combine Ingredients
Make a well in the center of the flour mixture and pour in the yeast mixture along with the softened butter. Stir until a rough dough forms.
- 4
Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until the dough is smooth and elastic.
- 5
First Rise
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
Laminating the Dough
- 6
Prepare the Butter Layer
Place the cold butter between two sheets of parchment paper and pound it into a rectangle about 1/2 inch thick. Refrigerate until firm.
- 7
Roll Out the Dough
Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it into a rectangle about 1/2 inch thick.
- 8
- 9
First Fold
Roll the dough out to a rectangle again and fold it into thirds (like a letter). Wrap in plastic wrap and refrigerate for 30 minutes.
- 10
Repeat the Folds
Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each fold.
Shaping and Baking
- 11
Shape the Croissants
After the final fold, roll the dough into a large rectangle about 1/4 inch thick. Cut into triangles and roll each triangle from the base to the tip to form the croissant shape.
- 12
Second Rise
Place the shaped croissants on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let them rise for about 1 hour, or until puffed.
- 13
Preheat the Oven
While the croissants are rising, preheat the oven to 400°F (200°C).
- 14
Bake the Croissants
Brush the croissants with a little milk or egg wash for a golden finish. Bake in the preheated oven for 15-20 minutes or until golden brown.
- 15
Cool and Serve
Remove the croissants from the oven and allow them to cool slightly before serving. Enjoy fresh!
