    Prepare the Ingredients

    Gather all the ingredients. Drain the sauerkraut and pat it dry with paper towels to remove excess moisture.

    Assemble the Reuben Sandwich

    Take two slices of rye bread. On one slice, layer 4 slices of Swiss cheese, followed by half of the corned beef, half of the sauerkraut, and 2 tablespoons of Thousand Island dressing. Top with another slice of rye bread.

    Grill the Sandwich

    Preheat a skillet or griddle over medium heat. Butter the outside of the sandwich lightly. Place the sandwich in the skillet and grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Repeat for Second Sandwich

    Repeat the assembly and grilling process for the second sandwich.

Serving

    Serve the Reuben

    Once both sandwiches are grilled, cut them in half and serve hot with a side of potato chips and whole pickles.
