Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, or use non-stick spray to prepare them.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until fully melted and smooth. Remove from heat and let it cool slightly.

  3. 3

    Mix Eggs and Sugar

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is light and fluffy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg and sugar mixture, stirring constantly to combine.

  5. 5

    Add Flour and Flavorings

Sift in the all-purpose flour, add vanilla extract, and a pinch of salt. Gently fold the mixture until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate. Serve immediately, dusted with powdered sugar, and add fresh berries and a scoop of vanilla ice cream if desired.
