Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast.

  2. 2

    Add Wet Ingredients

Add the melted butter, warm water, and milk to the dry ingredients. Stir until a rough dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover it with a damp towel, and let it rise for 1 hour or until doubled in size.

Butter Block Preparation

  1. 4

    Prepare Butter Block

While the dough is rising, take the cup of unsalted butter and place it between two sheets of parchment paper. Using a rolling pin, pound it into a rectangle about 1/2 inch thick. Refrigerate until firm.

Croissant Assembly

  1. 5

    Roll Out Dough

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a rectangle about 1/4 inch thick.

  2. 6

    Incorporate Butter Block

Place the chilled butter block in the center of the rolled out dough. Fold the dough over the butter, sealing the edges tightly.

  3. 7

    Laminate the Dough

Roll the dough out into a long rectangle and fold it into thirds (like a letter). Repeat this process two more times, chilling the dough for 20 minutes between each rolling. This creates layers.

  4. 8

    Cut and Shape Croissants

After the final fold, roll out the dough into a rectangle again. Cut it into triangles. Place a few pieces of chopped dark chocolate at the wide end of each triangle. Roll the triangle towards the point to form a croissant shape.

Baking

  1. 9

    Prepare for Baking

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. 10

    Egg Wash

In a small bowl, whisk together the egg and milk. Brush the mixture over the tops of the shaped croissants.

  3. 11

    Bake Croissants

Place the croissants on the prepared baking sheet and bake for 15-20 minutes or until they are golden brown.
