Chicken Piccata
Garlic Mashed Potatoes
Method
Chicken Piccata
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in flour, shaking off any excess.
- 2
Cook the Chicken
In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the chicken breasts and sauté for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- 3
Make the Sauce
In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for 1 minute until fragrant. Add chicken broth, lemon juice, and capers. Bring to a simmer and let it cook for about 5 minutes to reduce slightly.
- 4
Finish the Dish
Return the chicken to the skillet and cook for an additional 2 minutes, allowing it to absorb the flavors of the sauce. Garnish with fresh parsley before serving.
