Method

Prepare Chicken

  1. 1

    Pound the Chicken

Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet.

  2. 2

    Season the Chicken

Season both sides of the chicken breasts with salt and black pepper.

  3. 3

    Set Up Breading Station

In three separate shallow bowls, place the flour, beaten eggs, and breadcrumbs mixed with grated Parmesan cheese.

Bread the Chicken

  1. 4

    Coat the Chicken

Dredge each chicken breast in flour, shaking off any excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.

Cook Chicken

  1. 5

    Heat Oil

In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until shimmering.

  2. 6

    Fry the Chicken

Carefully place the breaded chicken breasts in the skillet and fry for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.

Assemble Chicken Parmesan

  1. 7

    Layer Ingredients

Preheat the oven to 375°F (190°C). In a baking dish, place the fried chicken cutlets. Top each with marinara sauce and sprinkle shredded mozzarella cheese on top.

  2. 8

    Bake

Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.

Serve

  1. 9

    Plate and Garnish

Remove from the oven, garnish with fresh basil leaves, and serve immediately with pasta or a side salad.
