Caprese Chicken Panini Recipe

Method

Preparing the Chicken

    Season Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Cook Chicken

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the chicken breasts.

    Rest Chicken

    Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from skillet and let rest for a few minutes.

    Slice Chicken

    Slice the cooked chicken into thin strips.

Assembling the Panini

    Spread Pesto

    Spread 1/2 cup of pesto on the inside of each piece of ciabatta bread.

    Layer Ingredients

    Layer sliced chicken, tomatoes, and fresh mozzarella on one side of the bread. Top with the other half of the bread.

    Brush with Olive Oil

    Brush the outside of each sandwich with the remaining olive oil.

Cooking the Panini

    Preheat Cooking Surface

    Preheat a Panini press or grill pan over medium heat.

    Cook Panini

    Place the assembled sandwiches on the press or grill pan. If using a grill pan, use a heavy skillet to press down on the sandwiches.

    Check for Doneness

    Cook for about 3-5 minutes, or until the bread is golden and the cheese is melted.

    Slice Panini

    Remove the panini from the heat and let cool for a minute before slicing in half.

Serving

    Plate and Serve

    Plate the sliced panini with a side of potato chips and pickles.
