    Prepare the Dough

    In a large bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well. Make a well in the center and add the egg, white wine (or vinegar), and melted butter. Mix until a dough forms.

    Knead and Rest

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

    Roll and Cut

    After resting, roll out the dough to about 1/8 inch thick. Cut into circles about 4 inches in diameter.

    Shape the Shells

    Wrap each circle around a cannoli tube, sealing the edges with a little water. Repeat with all circles.

    Fry the Shells

    In a deep pot, heat oil over medium heat. Once hot, carefully place the cannoli shells in the oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Filling

    Prepare the Filling

    In a medium bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Add Chocolate Chips

    Fold in the chocolate chips (and pistachios if using) into the ricotta mixture until evenly distributed.

    Fill the Cannoli

    Once the pastry shells are completely cool, use a piping bag to fill each shell with the ricotta filling.

    Serve

    Dust the filled cannoli with additional powdered sugar before serving. Enjoy your delicious homemade cannoli!
