Calamari Preparation

Prepare the Calamari
In a bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Coat the Calamari
Dip the calamari rings into the beaten eggs, allowing excess to drip off. Then, dredge them in the flour mixture, ensuring they are well-coated.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove them with a slotted spoon and place them on paper towels to drain excess oil.

Add the Tomatoes and Spices
Stir in the crushed tomatoes, oregano, basil, red pepper flakes, salt, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
