Hash Browns Preparation

    Grate the Potatoes

    Peel the Russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl of cold water to remove excess starch.

    Squeeze Out Water

    After soaking for about 10 minutes, drain the grated potatoes and use a clean kitchen towel to squeeze out as much moisture as possible.

    Prepare Onion

    Finely chop the onion and set aside.

    Cook Hash Browns

    Heat the vegetable oil in a large skillet over medium-high heat. Add the grated potatoes and chopped onion. Season with salt and black pepper. Press down with a spatula and cook for about 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes until crispy. Remove and set aside.

Burrito Assembly

    Cook the Meats

    In the same skillet, add the bacon slices and cook over medium heat until crispy. Remove and set aside. In the remaining grease, cook the sausage links until browned and cooked through, about 5-7 minutes. Remove and slice the sausage links.

    Scramble the Eggs

    In a bowl, whisk the eggs. Pour the eggs into the skillet and scramble until just set. Remove from heat.

    Combine Filling

    In a large bowl, combine the cooked bacon, sliced sausage, scrambled eggs, and shredded cheddar cheese.

    Wrap the Burrito

    To assemble, lay a tortilla wrap flat, place a generous portion of the filling in the center, and add a layer of hash browns. Fold in the sides and roll tightly to form a burrito. Repeat with remaining tortillas.

    Serve

    Warm the burritos briefly in the skillet, seam side down, until golden brown. Serve with your choice of salsa or hot sauce.
