Prepare the Apples
In a mixing bowl, combine the diced apples, brown sugar, cinnamon, and lemon juice. Toss well to coat the apples evenly. Set aside to let the mixture marinate.

Prepare the Puff Pastry
On a lightly floured surface, roll out the puff pastry sheets to about 1/4 inch thick. Cut each sheet into 6 squares.
