Roast the Beets
Preheat the oven to 400°F (200°C). Wash the beets and trim the tops and roots. Rub the beets with olive oil, salt, and pepper. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes or until tender. Remove from the oven and let cool.

Prepare Whipped Goat Cheese
In a bowl, combine the goat cheese and heavy cream. Whip until smooth and creamy. Adjust seasoning with salt and pepper if necessary.

Make Candied Pistachios
In a small saucepan over medium heat, combine the pistachios and sugar with a splash of water. Stir until the sugar dissolves and the mixture caramelizes slightly. Remove from heat and spread the nuts onto parchment paper to cool.

Prepare Asian Pear
Core and slice the Asian pear thinly.

Assemble the Dish
Once the beets are cool, peel them and cut into wedges. On a serving platter, arrange the beet wedges, dollops of whipped goat cheese, slices of Asian pear, and sprinkle with candied pistachios and shaved pecorino cheese.
