    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even sticks, about 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to an hour. This helps to remove more starch and will make the fries crispier.

    Prepare the Calabrian Chili Aioli

    In a bowl, mix together mayonnaise and Calabrian chili paste until well combined. Adjust seasoning to taste.

    Heat the Oil

    In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a towel. Carefully add a batch of fries to the hot oil and fry until golden brown and crispy, about 5 to 7 minutes. Remove and drain on paper towels.

    Season the Fries

    Immediately sprinkle the hot fries with salt to taste.

    Serve

    Serve the fries hot with Calabrian chili aioli and ketchup on the side for dipping.
