Meatballs
Method
Preparation
- 1
Prepare the Meatball Mixture
In a large mixing bowl, combine the ground chicken, ricotta cheese, breadcrumbs, egg, minced garlic, chopped basil, grated Parmesan cheese, salt, and black pepper. Mix until well combined.
- 2
Form the Meatballs
Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
- 3
Cook the Meatballs
In a large skillet, heat olive oil over medium heat. Add the meatballs in batches and cook until browned on all sides, about 8-10 minutes.
- 4
Prepare the Pomodoro Sauce
In the same skillet, add your favorite Pomodoro sauce (store-bought or homemade), and let it simmer for a few minutes.
- 5
Combine and Serve
Add the cooked meatballs to the Pomodoro sauce and simmer for an additional 5 minutes. Serve hot, garnished with extra basil and grated Parmigiano Reggiano.
