Cook the Bucatini
Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Bacon
In a large skillet over medium heat, add the olive oil and the applewood smoked bacon. Cook until the bacon is crispy, about 5-7 minutes. Remove from heat and set aside.

Combine Ingredients
Add the drained bucatini to the skillet with the crispy bacon. Toss to combine, allowing the pasta to absorb the bacon fat. Remove from heat.

Create the Sauce
Quickly add the egg yolk and cheese mixture to the pasta, tossing vigorously to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve
Plate the carbonara, garnish with additional Parmigiano Reggiano and freshly ground black pepper to taste. Serve immediately.
