Prepare the Slaw
In a large bowl, combine the jicama, sliced Granny Smith apple, and grated parsnip. In a separate small bowl, whisk together the curry powder, olive oil, lime juice, salt, and pepper to form a dressing. Pour the dressing over the slaw mixture and toss to combine. Set aside to marinate for at least 15 minutes.

Cook the Barramundi
While the slaw is marinating, heat a non-stick skillet over medium-high heat and add a tablespoon of olive oil. Season the barramundi fillets with salt and pepper. Place the fillets in the skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Serve
To serve, place a generous portion of curried jicama slaw on a plate and top with a barramundi fillet. Garnish with fresh cilantro and additional lime wedges if desired.
