    Prepare the Tomatoes

    Preheat your smoker to 225°F (107°C). Cut the Roma tomatoes in half and remove the seeds. Place them cut-side up on a smoker rack. Smoke the tomatoes for about 1 hour or until they are soft and infused with a smoky flavor.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, being careful not to burn the garlic.

    Combine and Simmer

    Once the tomatoes are smoked, add them to the pot with the sautéed onions and garlic. Pour in the vegetable broth, and add the smoked paprika, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches, blending until smooth. Return the soup to the pot.

    Finish with Cream

    Stir in the heavy cream and heat the bisque over low heat until warmed through. Adjust seasoning with more salt and pepper if desired.

    Ladle the bisque into bowls and garnish with fresh chopped basil before serving.
