Calamari and Fregola

Prepare the Fregola
In a pot, bring salted water to a boil. Add fregola and cook according to package instructions (usually about 10-12 minutes) until al dente. Drain and set aside.

Grill the Calamari
Preheat the Josper grill or any high-temperature grill. In a bowl, combine the cleaned calamari with olive oil, lemon zest, salt, and black pepper. Toss well to coat.

Cook the Calamari
Place the calamari on the hot grill and cook for about 2-3 minutes on each side, or until they are nicely charred and cooked through. Avoid overcooking to keep them tender.

Prepare the Tomato and Herb Mixture
In a mixing bowl, combine the halved Datterino tomatoes and chopped fresh herbs. Add a drizzle of olive oil and season with salt and pepper to taste.

Serve
To serve, place a portion of fregola on a plate, top with grilled calamari, and garnish with the tomato and herb mixture. Drizzle with additional olive oil if desired.
