Cooking Instructions

1. Marinating the Chicken

In a large bowl, combine the buttermilk, salt, and a pinch of black pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight for best results.

2. Preparing the Coating

In another bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, and remaining black pepper. This will be the coating for the chicken.

3. Coating the Chicken

Remove the chicken from the marinade and let the excess buttermilk drip off. Dredge each piece in the flour mixture until well coated. Shake off any excess flour.

4. Frying the Chicken

In a large pot or deep fryer, heat the oil to 350°F (175°C). Carefully add the chicken pieces in batches, being sure not to overcrowd the pot. Fry for about 12-15 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).

5. Draining and Serving

Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Serve hot with your choice of sides.
