Migas Preparation

1. Cook the Chorizo

In a skillet over medium heat, add chorizo and cook until browned and fully cooked, about 5-7 minutes. Remove from skillet and set aside.

2. Scramble the Eggs

In the same skillet, whisk the eggs in a bowl and pour them into the skillet. Scramble the eggs until they are just set, about 3-4 minutes. Stir in the cooked chorizo and black beans, mixing well to combine.

Pico de Gallo Preparation

3. Prepare the Pico

Dice the tomato and red onion finely. In a bowl, combine the diced tomato, red onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for the flavors to meld.

Pancake Preparation

4. Make the Pancakes

In a bowl, whisk together flour, baking powder, and sugar. In another bowl, combine milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Heat a non-stick skillet over medium heat and pour in 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
